Caponata is a traditional Sicilian dish, primarily a vegetable stew made with eggplants. You simply chop the vegetables into cubes and sauté them in olive oil. Then, add whole tomatoes and tomato paste and let it simmer. It's great served with ciabatta bread. Plus, the best part is that it tastes even better after it's cooled down, so you can store the leftovers in the refrigerator and enjoy them even more.
If you put it on bread, it becomes Caponata Bruschetta.
